Been getting into this white ragu pasta lately. Think I've perfected it.

Sofrito, pancetta, minced chicken, bit of chili, white wine to deglaze, chicken stock, bunch of thyme in there, cook on low for an hour, little bit of sugar to correct the bitterness (important), bit of milk or cream, toss the pasta in there once the sauce has reached desired consistency, finish with parmesan.

nice recipe but have it give it a yellow card: "been getting into this pasta LATELY" is not documentary reporting on what you actually had for dinner tonight (already too late for a last night entry). please adhere to the rules.

Dinner tonight will be sweet-and-smoky upside-down fisherman's pie (damn, it really needs a snappier name than that).

I think I've described it here before. The base is mashed sweet potato with garlic, chipotle chili flakes, rosemary and loads of butter (obviously). The topping is a basic cheese sauce with smoked fish crumbled into it, plus Worcestershire sauce and nutmeg. The final layer is, of course, extra cheese. Cheddar that's so mature it's got a pension sorted out at the age of 23 is compulsory. Then under the grill it goes...

We normally make it with smoked mackerel but we've got a mix of mackerel and herring to try this time.

I just ate a carrot. Not sure what to have tonight. I'm going to have to get down the shop before it starts raining again but I don't want to move.

this is shaping up well. a few reminders to reinforce the ground rules but that's to be expected in a new undertaking of this magnitude. not sure why I'm so vested in it, tbh. prolly because I love to eat. tea's fish pie dish made my stomach growl in jealousy. good news about version as well. once third resurfaces, we'll need a rundown of his Turkish delights.

I'm cooking now Leo. A simple chickpea curry with a preprepared Chana masala mix from the shop. Which isn't very good but I can't be fucked. I put some spinach in there. I'll have it with cous cous. The rest of the broccoli. Maybe an egg if I can be bothered.

Curry as well for me. Coconut milk, red curry paste, bit extra chili, potatoes, carrots and chicken. Fish sauce and sugar to taste. Jasmine rice. Tuborg classic.

Later I will prepare a bowl of greek yoghurt with rhubarb compote and chocolate.

Do you live alone entertainment? You seem very grown up for your age. Cooking big meals and that. I suppose that's something for the Europe thread isn't it.

Yes I live alone. Learned cooking partly to impress girls but it turned out I really like it. I'm not very mature, though.
