You think it's surprising when he throws 15 eggs in but then wait for surprise number 2 with the thin pancake.

None of these chefs use teflon/non stick do they.

generous amounts of oil, tho.

that looks great, served in the pancake. also, it much be a pretty good workout, he was tossing and mixing all the stuff around for over 10 minutes straight,

Constant attention, high heat. And yes, very generous on the oil. I just love the bit where he piles it up and chucks the 15 eggs in.

I was surprised the eggs didn't scramble and solidify immediately. maybe because he dropped them into lots of oil as opposed to on the pan itself?

I suppose it's cos of making a well, so it was like they weren't spread out enough.

Some sort of punishment device being redeployed here as a means to "square" the "circle" of the egg to the bread.

Couldn't help thinking of Dostoyevskys critique of socialism as something lifeless, inert.

So sparing on the butter, so many micro adjustments of the bread.

Why not cross the lines of green and red sauce?

Nice to see the addition of sweetcorn and Lettuce though.

I can imagine biting into one of these after a hard 45 minutes of military drill in the park.

nut oils - high heat ranges for frying on blasting burners

for high temps most others catch and burn

the range of oils, lards and everything else gives lush flavours (sesame is a favourite) and you can see how a solid fry chef is a craft and a half

I don't think it's possible to get those key ingredients (masa, corn husks) apart from ordering them online.

Lard of course plentiful.

Kenji's version of the complicated egg sandwich is probably the only one you'd ever bother with, cos it's a more conventional kitchen setup, but even he faffs about no end with it


He's quite jumpy and scattered really. I think a lot of chefs are. Jumpy dispositions.

Have I posted one of these German ones already? Strange aspirational incidental music, and they've ramped up the sound of the knife chopping. Everything's very easy and just chopping, oven. Doesn't look very appetising, but simple.

when my brother was 15 and going off the rails with the booze etc my mother got him a cash-in-hand job in a kitchen washing dishes thinking it would terrify him and straighten him out. But he loved it because all chefs are psychotic drug dealers and he was happily led astray by them and has stayed in catering his whole adult life.

I once got a trial day as a kitchen porter at some chain hotel on old street roundabout. Didnt get called back. Thats the end of my professional catering experience. Put me off chain hotel breakfast eggs for life, cos one of my jobs was pouring fake powdered egg into warm water to make what looked like scrambled eggs.
