Why do we crust chicken in breadcrumbs when crushed Doritos add much more flavor and crunch?

Chefs use doritos with breadcrumbs, this much i know, oven roasted fish dishes so you create texture and flavour profiles people can't quite put their proverbial taste-buds on.

funnily enough, we were at a poshish restaurant tonight and they had potato dauphinoise, so tasty, but it was deffo all the extra butter chucked in the layers.
