I fried haddock in butter and oil with lemon zest and juice, samphire, olives, capers, garlic and a little pesto and veg stock. Then served it over a central pile of cheesy mash in the middle of the plate, like in a fancy restaurant, with some cherry tomatoes and rocket. Really, really good.

Stewed rhubarb, yoghurt, banana and honey for pud.

Yeah exactly. Big fan of those dried ones, they pack so much more flavor than supermarket fresh ones.
Yeah, just a handful gives a whole dish a big dose of umami-ness. I'm lucky enough to live near some good spots where they grow but they're actually pretty good value in supermarkets - at least I think 3 pounds for 30 grams (or even 50 g in some shops) is decent, considering they're over 90 pc water when fresh.

Yeah it's around the same here. They last for longer and the variety is generally more impressive. You can get mixed jars which are great.

Tonight, Matthew, I'll be making mushroom soup, fittingly enough. Some of the new crop of horse mushrooms that I picked and fried the other day, topped up with some dried ceps from last year. Chicken stock (from a cube, I'm afraid), onions, garlic, cream and tarragon. Plus sourdough bread - yes, I'm one of "those people", deal with it.

Which went down like a bucket of sick with our friend Jorge who is an extremely flamboyant black gay former designer who wears clothes Lady Gaga would think twice about.

I think a lot of people misunderstood the moral or at least the emphasis of that story... it doesn't have to be big, it's just that it mustn't be small. Some room for manoeuvre there I'd say.
