my daily lunch is hummus on two slices of toasted whole wheat bread, half-dozen cherry tomatoes, handful of raw baby carrots and a couple of pickled peppers. then the wife cooks vegetarian for dinner. not indulging when out on cheeseburgers and greasy fries since March has helped me lose 10 pounds, although I do look forward to the occasional indulgence post-corona.
we have a tasty veg diet but I can't say we study things to make sure we're getting a healthy, balance diet. there are probably nutrients and vitamins we're lacking. I have a banana a day, so I guess I get potassium and vitamin b from that.
Got my phone fixed (after a month) so get ready for an onslaught of dinner pics!
Today I had nothing to do with dinner except for eating it, entire thing from idea to execution was down to her. Basically peppers absolutely stuffed with a mixture of chopped up black pudding, rice, onions etc. I would have roasted them at that point but apparently the Russian way is to stew the peppers in a tomato and pepper sauce with - I dunno - red wine, balsamic, yogurt and so on.
Yesterday we went to check out this vineyard wine shop thing about an hour's drive from Lisbon, there is a typical but well regarded restaurant in a town down the road too and girlfriend was keen to try their liver... but they didn't have it on that day sadly so she went for a grilled rabbit while I had "secrets of the black porc" which is a classic cut from near the ribs that they have everywhere here. Great food, huge portions and really cheap, hers was a rabbit sliced in half front to back and chopped into chunks. The whole thing, face and all. What she couldn't eat she took home in a doggy bag and took home and we had it for dinner today... so, long story short, I just ate a rabbit's face. Look at its little teeth.
