Are they White monks or proper eastern looking ones? White monks doesnt feel quite the same does it? Unless they're Franciscans or something

He's Vietnamese. The only non white monk in residence. Definitely lends a bit of authenticity to the place. The rest are German. He's the best cook here apart from the Mexican lady who is the resident chef. Somehow you can take words of wisdom from far easterners much easier.

I reckon that there were loads of cool monks in the old days - Franciscans, Benedictines, Capuchins etc - but now they don't seem to have the same cachet.

I used to hang out with an ex-monk up in the lake district. He was French and played the saxophone. Total oddball like me. He got kicked out of the monastery for growing weed.

sautéed brussel sprouts and shallots over penne, drizzled with olive oil and sprinkled with toasted panko breadcrumbs.

Note: toasted panko bread crumbs are wonderful, the key to a wonderful sardine/anchovy/capers pasta the wife makes.

Working at a bar in the city today, little perk of the job was una bocadillo with serrano ham and manchego cheese. Washed it down with a glass of crianza tinto. The Spanish kitchen is my fave.

Gonna hit up our local restaurant called Baixinho which means shorty I'm told, named after Ricardo's grandfather or father or whatever who opened it. It's a great local spot with fucking enormous lumps of meat or fish and loads of prawns, clams etc plus specials like the shrimp and squid kebab and fried cuttlefish which all the locals love but I find strangely dry and bland. Love going there and always end up having after dinner coffee and then after coffee brandy and so on. Cheap n all.
