Body clock is more fucked than ever before by lockdown... found myself making.... lunch, dinner(?)... at 2am. My stab at poke tuna which is basically raw tuna marinaded in soy, honey, sesame etc etc and served with avocado on rice.TunaPoke.jpg

First BBQ of the year yesterday evening. Sausages coated in Cajun seasoning and, yet again, jerk chicken.

Running low on many ingredients so had to improvise a little... used a load of pickled onions in this stew with a couple of massive steaks that were about to turn... the usual veg, loads of spices and some white beans. Was actually much tastier than many more orthodox and planned stews we make.

Well, I hope you've all eaten (except Rich, who I expect is about to tuck into breakfast about now), because here are some photos taken over the last few days.

Sausages from the BBQ - these are the ones coated in Cajun seasoning by my spice-wizard brother-in-law:

Jerk chicken to follow:

And a spicy thom kha gai soup made using the stock from the chicken, with prawns, water chestnuts and tenderstem broccoli:

Looks good man... been eating out loads recently, I guess to sort of make up for not being able to. Yesterday a friend had hired a bar for her birthday and the food was great - snails (again), prawns, secrets of the black pork, fried cuttlefish (again).... all the classics. Tomorrow meeting friends for lunch too... today did another poke thing but this time with salmon instead of tuna. Also good in this - already - insane heat. Been at the beach last two afternoons from about 5pm... too hot before that.

Home-made burgers on the BBQ yesterday. Same recipe (more or less) as the one I posted years ago in the flavour combinations thread, except that these had pieces of chorizo, in addition to smoky bacon, embedded in the beef matrix.

first takeaway (or takeout, as we say here) of lockdown yesterday, Cuban sandwich from a local place. also actually the first time I've eaten meat in a couple of mouths. while I wasn't dying for it, I can't say I didn't really enjoy it. curious to see if the body reacts.

I ate meat for the first time in a while as well yesterday. Did a steak bearnaise, the inauguration of a new carbon steel pan. Got these canadian rib eyes that cost a fortune and a nice wine.

Expectedly, it was glorious, but definitely can't eat that way everyday. Between the bearnaise (think I did 150 grams of butter for two people) and the generous basting of the steaks, that was an inordinate amount of grease.

Yesterday we went to visit friends in Barreiro on the other side of the river. Barreiro is a strange place in that even though it's directly across from Lisbon (and there is a ferry), it's miles from the bridges and so to drive there takes ages. Which makes it really cheap, we know quite a few people who have moved there recently, it has some huge warehouse thing owned by an art collective where we saw some bands and art and stuff one time. And yesterday we sat by the river in the sun and ate at this really great restaurant. I had liver with chips - doesn't look much but it's the third time I've had it in one of these traditional places and each time it's been amazing - girlfriend had grilled skewer of squid and then we had desserts - mine being something which translated as caramel drool. Washed down with buckets of green wine and shot after coffee after shot after coffee. We were there for hours and it was really cheap.
As you can see people have pretty much given up on social distancing etc but they did enforce mask wearing inside I guess.

So it's a name for a certain sandwich.... like club or Ruebens or whatever? It's not just a sandwich from a Cuban deli. Good to know.

Hungover like fuck today... luckily girlfriend cooked a Russian breakfast her mum used to do which is basically loads of bacon and onion and eggs just sort of fried up together. Very tasty, brought me back to life a bit.

In the evening was my turn, made poke again again... we're loving this at the moment, sometimes salmon but I think the tuna one is best. It's so fresh and cleansing feeling when you're hungover and it's really hot outside.

We went to the supermarket and got this cured sheep cheese which is one of the strongest smelling and tasting cheeses I've ever eaten... taste almost burns your mouth. Googling it, apparently it's won some awards.

Tomorrow my turn to cook breakfast.... seems we're having devilled pork kidneys, wonder how that will turn out. I've done the dish before but never with kidneys from a pig, they are big fuckers. We shall see.....

The first two look nice, but I doubt I could stomach the cheese. I don't even like cheddar... What's the book in the second? The Book of Devices?

is that cheese very hard then, like manchego? i like the spanish hard cheeses, specially how they serve them in bars, as their own thing, and they are sweating to buggery
