Let's Talk About Ceps
We had bavette steaks the other night, which were stupidly massive so there was some left over. So I made a simple, humble sandwich by refrying the leftover steak, plus some black pudding, and garnished it with mature stilton, salad, English mustard and truffle-infused ketchup to create a pleasingly simple peasant meal of leftovers.

We been eating leitao sandwiches (with mayo, onion chutney etc) for lunch last few days... bought a load from the supermarket. It's really fucking expensive (by Portuguese standards) - she suggested a huge cut and we went for a quarter of that which still worked out at 14 euros or something.

Sugar and thickened milk are just two of the dreamy ingredients blended together to create this mouth-wateringly tempting dessert. Even the cream is special. It's actually khoya the traditional Asian dairy product made from whole milk. Add a generous helping of finely sliced and chopped pistachio nuts and you have one of the great sweets of Asia. The texture, the taste and the aroma have to be experienced to be believed.

Girlfriend spied a two-fer-one offer on tripe (or "cow stomach and cow feet in tomato sauce" as the packet had it) - lucky me... and those sausages were smelly but this was also quite robust. Went down well enough with some mustard and veg and bread to mop it up.

Let's Talk About Ceps
On Sunday I made pizza - nothing out of the ordinary for the toppings, but did rehydrate some horse mushrooms for it, so I had a small volume of mushroom stock left over from that.

Last night I cooked salmon in black glaze again, this time with added mushroom stock - dunno if it made that much difference, maybe a little extra umami. The Mrs fried some courgettes with smoked garlic and lemon juice to go on the side, and we had sticky rice too.

Just made and ate a spicy soup with a sort of home-made Thai green curry paste. Stock was home-made too, so some extra salt was justified, plus coconut milk, fish sauce, sugar, lime juice. Great big prawns, spring onions, garden peas and ceps. Plus udon noodles. Well good.
