Kenji's version of the complicated egg sandwich is probably the only one you'd ever bother with, cos it's a more conventional kitchen setup, but even he faffs about no end with it
He's quite jumpy and scattered really. I think a lot of chefs are. Jumpy dispositions.
Have I posted one of these German ones already? Strange aspirational incidental music, and they've ramped up the sound of the knife chopping. Everything's very easy and just chopping, oven. Doesn't look very appetising, but simple.
when my brother was 15 and going off the rails with the booze etc my mother got him a cash-in-hand job in a kitchen washing dishes thinking it would terrify him and straighten him out. But he loved it because all chefs are psychotic drug dealers and he was happily led astray by them and has stayed in catering his whole adult life.
I once got a trial day as a kitchen porter at some chain hotel on old street roundabout. Didnt get called back. Thats the end of my professional catering experience. Put me off chain hotel breakfast eggs for life, cos one of my jobs was pouring fake powdered egg into warm water to make what looked like scrambled eggs.
