some of my best stir fries started out in life as well planned curries that subsequently went a bit sideways

I just wish curry was as ubiquitous here.
I was in my early 20s before I even had it, and that was in Japan.

Chip shop curry can be a wonderful thing, there are as many types as dialects in Papua New Guinea. I like the spicy orangeish-brown variety ladled out in sparing portions at only the best Chinese-run chippies

It’s usually really similar to British-style ‘Madras’ curry powder, ie rank, reminds me of school dinners

My mother used to make a curry when I was a child that had sliced banana and raisons in it.

Thankfully this stopped when my aunt introduced her to tandoori powder.
Sliced banana and raisons were the raisin d'être of 1980s home-made Anglo-curry. (I remember my mum making them too.)
