Speaking of which, I tried a blue cheese called Stichelton last week and I have to say it surpassed both of these - very strong and quite similar to Roquefort but with a little extra oomph

yeah that's the unpasteurised stilton innit (although i think because it's made outside the stilton appelation controlee area- or whatever the equivalent is- it can't be called stilton). lovely stuff, bought a load of it for xmas.
my favourite blue cheese at the moment is Picos d'europa from spain. it's wrapped in leaves, which is pretty cool.
